Susan’s “healthy eating” workshop was so inspiring as she obviously lives what she teaches. She even glows, which makes me want what she is eating even more! I have been working on my eating issues and cooking phobias for my entire adult life. There was something about this class that finally made healthy eating more accessible to me. I’m not afraid to cook anymore–having fun experimenting in the kitchen like I’ve never been able to do before. I learned a lot about nutrition but it was the everyday practical tips that made what I was learning within my reach. As I’m eating more and more whole foods I find that I am having fewer cravings, which, at the risk of sounding too dramatic, is a dream come true for me as I have battled my appetite and weight since adolescence. Most of all she showed me that eating healthfully is not something you do to be “good” as I had always believed in the past, it’s actually more delicious and feels better than eating all that processed junk.
