Susan is a fantastic teacher, coach, booster and friend. Her deep knowledge and desire to share it is what makes the course so valuable. We’re learning from someone who “walks the walk” and “shares the talk”.
I learned A LOT…about food, equipment, support materials, preparation techniques, where and how to shop, and a good portion of that knowledge came from my fellow students so “Thank you all”.
I’ve expanded my repertoire of foods and look forward to being more open to things I may not have tried before. I’m feeling better about myself because I set a goal and saw it through. I admit, even though I sometimes ate more of the “right stuff” than I needed, I avoided bingeing on empty calories.
I can honestly say that I do feel physically “healthier” than I did before. It’s good to remember that our bodies are machines and they need, and deserve, high quality fuel to work efficiently and smoothly for a long, long time.
