Ingredients
- 3 zucchinis cut in half, lengthwise
- 1 cup cooked quinoa
- 1/2 bell pepper, diced
- 1/2 cup black beans
- 1/2 small red onion, finely chopped
- 1/2 cup corn
- 1/2 cup Mexican cheese
- 1/2 cup minced cilantro
Taco Seasoning:
- 1/2 teaspoon cumin powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon coriander
- 1/4 teaspoon paprika
- 1/2 teaspoon garlic powder
Instructions
- Preheat oven to 400 degrees.
- Scoop out center of zucchini and brush with olive oil.
- On a parchment lined baking sheet, place zucchini in oven, bake for approx. 10 minutes or until soft.
- In a bowl, mix scooped out zucchini, quinoa, peppers, red onion, corn & spices.
- Add mixture to zucchini boats, sprinkle cheese.
- Bake for approx. 20 minutes until cheese is melted.
- Garnish with cilantro and enjoy.
