Ingredients
- 1 seedless watermelon, approximately 3/4 cubed and 1/4 diced
- 5 cucumbers, 3 chopped and 2 diced
- 3 limes, juice and zest
- 1/2 cup mint leaves, finely chopped
Instructions
- Puree cubed watermelon, chopped cucumbers, fresh mint and freshly squeezed limejuice in a blender. (You will need to work in batches)
- Chill in refrigerator.
- Add diced watermelon and cucumber to the gazpacho, top off with lime zest.
- Ladle in cups and garnish with mint leaf
