Ingredients
- 1 cup fresh basil
- 1 cup kale
- ½ cup flat leaf parsley
- ½ cup walnuts
- 2 tablespoons hemp seeds
- 2 medium garlic cloves
- 1/3 cup Extra Virgin Olive Oil
- 1 zucchini
- Sea Salt to taste
Optional and delicious, cherry tomatoes, avocado + pepitas
Instructions
Add greens, walnuts, hemp & garlic to food processor. With the motor running, add the olive oil in a steady stream until the pesto becomes creamy or to your likings.
Spiralize the zucchinis and add to a bowl. Toss with pesto sauce. Garnish with tomatoes and for extra healthy fat, add in avocado and sprinkle on pumpkin seeds.
