Choose your favorites
- Spinach
- Onion
- Scallions
- Zucchini
- Tomato
- Pepper
- Basil
- Mushrooms
- Cheese (shredded)
Salt & pepper to season
Instructions
Preheat oven to 375 degrees.
1. Whisk the eggs.
2. Add in your chopped/diced veggies, mix together.
3. Fill each muffin cup 3/4 way.
4. Bake for 20-25 minutes or until eggs are toothpick ready.
5. Enjoy for breakfast, lunch or snack!
6. Refrigerate or freeze the leftovers.
