Ingredients
- I head cauliflower
- 3 tablespoons toasted sesame oil (more to taste)
- 2 tablespoons tamari (more to taste)
- 3 carrots, diced
- 1 cup green peas
- 3 scallions, chopped (green & white parts separated)
- 2 tablespoon minced garlic
- Vegetable broth (healthy sautéing)
Instructions
- Cut cauliflower into florets, wash and spin dry in salad spinner
- Using a food processor, add cauliflower florets and pulse to create a “rice-like” texture.
- Heat 2-3 tablespoons vegetable broth on medium heat
- Add garlic, sauté for 2 minutes.
- Add carrots, sauté 3 minutes.
- Add in peas, white part of scallions, cauliflower, sesame oil & tamari.
- Cook for 10 minutes, stirring often.
- Add in green part of scallions, mix together, serve immediately
