Ingredients
- 1 cup 8-10 medjool dates, pitted
- 1/4 cup raw honey
- 1/3 cup natural peanut butter (or nut butter of your choice)
- 2 cups nuts &/or seeds pistachios, walnuts, cashews, almonds, sunflower seeds, pumpkin seeds, etc.
- ½ cup shredded unsweetened coconut
- 1 tablespoon chia seeds
- 1 tablespoon flax meal
- 1 teaspoon pure vanilla extract
- 2 teaspoons ground cinnamon
- 1 or 2 teaspoons ground ginger (optional)
Instructions
- Preheat the oven to 350F and line a 13 x 9 baking dish with parchment paper.
- In a food processor, add the dates and pulse for approx. 15 seconds.
- Add in the nut butter, honey and vanilla and pulse together.
- Add in nuts, seeds & coconut to date mixture in food processor. Pulse a few times (to keep it chunky).
- Place the mixture into the parchment-lined baking dish. Press the mixture into the pan and create a solid brick. Bake for approx. 25 minutes, until golden brown.
- Remove from the oven and lift the parchment with the bar and cool. Once cool, slice into bars. Allow them to cool and store in airtight container in freezer.
