Ingredients:
- ½ cup almond flour
- ½ cup coconut flour
- 1 tsp. ground cinnamon
- 1 tsp. baking soda
- 2 tablespoons coconut oil, melted
- ¼ cup maple syrup
- 3 large organic eggs (*or chia eggs)
- 1 tsp. pure vanilla extract
- 2 large very ripe bananas, mashed well
- ½ cup frozen blueberries
- ½ cup walnuts (optional)
*chia egg – combine 3 tablespoon chia seeds to 9 tablespoons water. mix together. Wait 3 minutes, then add to recipe.
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, combine flour, cinnamon, nuts & baking soda, whisk together.
- In a separate bowl, combine banana, eggs, maple syrup, coconut oil and vanilla.
- Combine dry ingredients into wet and mix well. Fold in blueberries.
- Using an ice cream scooper, place batter into lined muffin tins. Add a thin slice of banana on each muffin.
- Bake 25-30 minutes or until slightly browned
