Banana Bread
Ingredients:
Dry
- 1/2 cup almond flour
- 1/2 cup coconut flour
- 1 tsp. ground cinnamon
- 1/4 cup dark chocolate chips (optional)
- 1/4 cup walnuts (optional)
- 1 tsp. baking soda
wet
- 1/2 teaspoon coconut oil, melted (to grease tin)
- 3 tablespoons maple syrup
- 3 large organic eggs
- 1 teaspoon pure vanilla extract
- 2 very ripe bananas, mashed
Directions:
- Preheat oven to 350 degrees. Lightly oil loaf pan.
- In a large mixing bowl, add mashed bananas, maple syrup, eggs & vanilla, blend together until smooth.
- In a medium mixing bowl, combine almond & coconut flour, cinnamon and baking soda, whisk together.
- Add dry ingredients into wet, mix together.
- Fold in chips and nuts if using
- Scoop batter into loaf pan
- Bake 30 minutes or until center of bread is done (Use toothpick test)
- Let cool & enjoy
