Ingredients
- 1 cup meejool dates
- 1 large carrot, shredded
- 2 cups walnuts
- 2 tablespoons hemp seeds
- 1/4 cup unsweetened shredded coconut
- 1 tablespoon chia or ground flax seeds
- 1/2 teaspoon vanilla
- 1 teaspoons cinnamon
- 1 teaspoon ground ginger
Instructions
- Pulse dates & shredded carrots in a food processor.
- Add in the walnuts, hemp, vanilla, cinnamon & ginger to the food processor & blend together until it becomes one sticky large ball.
- Form small balls with the dough in your hands
- Roll in shredded coconut.
- Store covered in the refrigerator or freezer and serve chilled.
