Ingredients
2 medium sized zucchinis
2 medium garlic cloves
- 2/3 cups walnuts
- 1/8 cup hemp seeds
- ½ cups loosely packed basil leaves
- ½ cups loosely packed spinach or kale
- 2 big pinches sea salt
- 1/3 cup olive oil
(more to liquefy)
Instructions
Zucchini Pasta
Make the zucchini noodles using a spiralizer or julienne peeler.
Pesto
- In a food processor, add garlic, walnuts, basil, spinach and hemp seeds.
- Pulse a few times, and then begin to drizzle the olive oil into the mixture while continuing to pulse until the pesto is smooth.
- Salt to taste.
- Toss zucchini noodles with pesto and enjoy.
