Ingredients
- 1/2 cup quinoa
- 1 cup water
- 1 cucumber, diced
- 1 cup cherry tomatos, diced
- 1 bunch mint, minced
- 1 bunch parsley, minced
- 1 tablespoon minced garlic
- 2 tablespoons lemon juice
- 3 tablespoons extra virgin olive oil
- Sea salt/Pepper to taste
Instructions
- Rinse quinoa.
- In a pot bring water and salt to a boil and add quinoa.
- Reduce heat to low and simmer covered for 15 minutes or until grains are fluffy and water is absorbed.
- Fluff quinoa with a fork; cover and let it cool.
- Transfer the quinoa into a large bowl and combine all ingredients.
- Mix gently and add lemon juice, minced garlic, olive oil, salt & pepper to your taste.
I love to add in chickpeas and avocado and sprinkle on hemp seeds for extra plant protein and healthy fats.
