Ingredients
- 1/2 cup unsweetened pumpkin puree
- 1/4 cup maple syrup
- 2 eggs
- 1 cup almond flour
- 1/2 tsp. baking soda
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. ground cloves
- 1.3 cup toasted walnuts, chopped (optional)
Instructions
1. Preheat oven to 350 degrees.
2. In a bowl, combine pumpkin, maple syrup and eggs.
3. In a separate bowl, combine pumpkin, maple syrup and eggs, whisk together.
3. Add dry ingredients into wet and mix well. Add in walnuts.
4. Line mini muffin tin with liners, fill 3/4 way.
5. Bake at 350 degrees for approx. 20 minutes or until toothpick ready.
